Ingredients


  • 8 lamb chops (rib or loin — available fresh daily at Ridgefield Prime Market)

  • 3 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 tbsp fresh rosemary, chopped

  • 1 tbsp fresh thyme, chopped

  • 1 tsp kosher salt

  • ½ tsp black pepper

  • 1 tbsp butter

  • Optional: lemon wedges, flaky sea salt


Instructions


1. Season the lamb

Pat chops dry. In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper. Rub the mixture all over the chops. Let them rest 10–15 minutes.

2. Heat the skillet

Place a cast-iron or stainless steel skillet over medium-high heat and add a splash of olive oil.

3. Sear

Add lamb chops in a single layer. Sear 2–3 minutes per side until golden brown.

4. Butter baste

Lower heat slightly. Add butter and spoon the melted butter over the chops for 30–60 seconds.

5. Check doneness

  • Medium-rare: 130°F

  • Medium: 140°FLet rest 5 minutes before serving.

6. Finish

Top with flaky salt or lemon juice, and serve immediately.
